We got these beautiful heirloom carrots from a farmer that sells the best sweet corn at the side of the road. A side was needed and I recalled watching Thomas Keller’s Masterclass about glazed carrots and decided to go with that. The process is simple: cut your carrots (I went with oblique cut) and bring them to a boil with just enough water to cover them. Cook until most of the water is gone, add butter and some sugar, keep cooking on low heat until they are covered by the syrup and shiny.

Last time I made the pan fried sesame garlic tofu I had used silken tofu and it didn’t come out very crispy and the sauce was lacking aromatics. So I made it again, and this time used firm tofu which made frying it crispy possible. I also added aromatics (green onion, garlic, and ginger) to flavor the sauce. I added them just before adding the sauce slurry, but I think the pan was a little too hot, so garlic became a little bitter.

Needed a breakfast and felt like something different so I threw together a firttata with some random veggies I had in the fridge. It came out quite nicely, even though I probably shouldn’t have tried to flip the whole thing. Instead I should have just cooked it with a lid.

A coworker of mine posted a mouthwatering picture of crispy tofu in sauce. So obviously I asked for the recipe. I only had soft tofu which didn’t work out too well, I had trouble coating the tofu because it kept falling apart, so next time at least medium or hard tofu. Overall the flavor was not bad, but next time I’d throw in some green onion, garlic, and ginger before adding the sauce, just to give it a more complex flavor.

Needed a veggie dish last night and I had chickpeas and cauliflower at hand, so I tried myself at an Indian curry. I didn’t really have a recipe, just applied some basics I’ve learned about Indian food. The whole dish came out with a wonderful aroma and was very flavorful, I will definitely try to make this again. We ate it garnished with chopped cilantro over white rice, with some leftover lemon salmon and Avocado.

Our go-to vegetable side dish: sauteed spinach with garlic. Takes just a few minutes of prep time and cooks in less than 5. You’ll need minced garlic (however much you like), spinach leaves, oil, salt. Heat up pan with oil, add garlic when hot and sauté for like a minute, add spinach, and cook until all wilted. Season with salt, add a little bit of olive oil.

Another recipe from my Mum. Thin corn pancakes stuffed with zucchini, leeks, carrot, and onion, and covered with cheese. I’ll get the recipe up soon, just have to rework my templates to support more complex recipes.

A easy and fast to prepare Potatoes au Gratin. I found this recipe a long time ago on the internet so I’m not sure how authentic this recipe is. It does however make a great side dish that’s easy to prepare.

My mum used to make this and today I needed a veggie side and this popped into my mind. Dead simple: steam cauliflower until tender, brown butter with breadcrumbs, pour over, season, and garnish with some parsley. Even better if the cauliflower is roasted , but I didn’t have time for that.
